Why are 3 year olds completely irrational? A right of passage for parents indeed, attending that very first parent/teacher conference. We experienced this yesterday morning and found out that although they sit in very tiny chairs…that we in turn had to sit in, how weird is that? They are indeed learning a lot. Turns out, our guy is doing well in Kindergarten and adjusting nicely. He did have the advantage of having attended Nursery and Pre-School so I didn’t doubt he was basically prepared. His Pre-K teacher had expressed some hesitation because of his shyness and refusal …

Make-Ahead Party Mashed Potatoes

1. HEAT oven to 350°F. Spray a 13 x 9-inch oven safe casserole with no-stick cooking spray; set aside. Heat water, butter, garlic salt and onion salt to boiling in a 6 quart Dutch oven. Remove from heat. Add cream cheese, milk and sour cream, stirring until cream cheese is dissolved.
2. STIR in potato flakes, mixing until all ingredients are well combined. Spread mashed potato mixture into prepared pan.
