Strumming Dingo uses up the Christmas satsumas

Not sure what to do with the satsumas your dad insists on putting in your Christmas stocking year after year? There's nothing like the fresh flavour of satsumas and clementines to cut through the rich and heavy dishes we traditionally cook on Christmas day, so just use them in a cocktail!

The Strumming Dingo is based on the original Dingo recipe, but clementine or satsuma juice is used, and the drink is garnished with a segment of the fruit.

Strumming Dingo

Ingredients

1/2 measure of Southern Comfort 1 1/2 measures of White rum 1 measure of Amaretto 1 measure of Sweet & sour mix 2 measures of Satsuma juice a dash of Grenadine

Method

Mix all ingredients in a shaker with ice and blend well. Strain into a highball glass over ice and garnish with a piece of satsuma and a maraschino cherry on a cocktail stick.
