1 1/2 cups chicken broth
1/2 cup onions, chopped
1/2 cup celery, chopped
1/2 cup carrots, grated
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1 cup milk
1/2 cup cheddar cheese
2 cups broccoli
In a saucepan, combine chicken broth, chopped onion, chopped celery, grated carrots and broccoli. Bring mixture to a boil. Reduce heat. Cover and simmer 10 minutes until vegetables are cooked. In another saucepan melt butter. Blend in flour, salt and pepper. Add the milk all at once. Cook and stir until thickened. Stir in vegetable mixture and cheese. Cook until thoroughly heated.
